Brook Cook: Three Delicious Goodies to Make for the Holidays

During the holidays, it’s always a fun time to gather with friends or family and put together some special goodies to enjoy. Here are a few recipes to try out over the holiday winter break!
This classic cookie is one that many people love to make, especially during the holidays. There are a variety of recipes for people to try, and this recipe is particularly best made with friends and family. It’s the decoration and icing that really make this treat so delicious and special to enjoy!
Ingredients:
- ⅓ cup margarine or butter
- ⅓ shortening
- 2 cups all purpose flour
- 1 egg
- ¾ cup of sugar
- 1 tablespoon of milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla
Dash of salt

During the holidays, a special day that is celebrated a lot is Christmas. A popular decoration that many people put up for the holidays is a Christmas tree. With the glowing lights and colorful ornaments the tree becomes spectacular. Many different goodies can be decorated to look like Christmas trees such as cookies, rice krispies, and cupcakes. This cupcake recipe is great for making a goodie look just like a Christmas tree. Adding a dark green icing and colorful sprinkles for ornaments, this wonderful treat comes to life.
Cake Ingredients:
- 2 large eggs
- 1 cup granulated sugar
- 1 stick butter (½ cup cup), room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- Pinch of salt
- ½ cup of milk

Butter Frosting Ingredients:
- ⅓ cup of butter or margarine
- 4 ½ cups sifted powdered sugar
- ¼ cup milk
- 1 ½ teaspoons vanilla

This goodie consists of a creamy, peanut butter and a creamy chocolate flavor. It’s another very common goodie during the holidays and this treat resembles the buckeye nut located in Ohio. History teacher Ms.North loves to make these buckeyes during the holidays with her family. She says her favorite part about making these is, “I would be home with my sister and my mom when we were out of school for Christmas. The three of us would bake these treats as we had time to do so. We would enjoy them on rides around Raleigh to look at lights people had up in their yards and houses.”
Ingredients:
- ½ cup of peanut butter (if allergic there are other butters you can substitute for)
- 3 tablespoons salted butter, softened
- 1 cup or more of powdered sugar (10x)
- 8 oz semi-sweet chocolate chips, chopped or chocolate chips
